3 1/2 to 4 cups bread flour, plus more for rolling (590 g)
1 teaspoon sugar (5 g)
1 envelope instant dry yeast (8 g)
2 teaspoons kosher salt (12 g)
1 1/2 cups water (338 g), 110 degrees F
2 tablespoons olive oil (1 tbsp of oil is equal to 10 g), plus 2 teaspoons

1 g onion powder
Cook crust at 500 degrees for 5 min

1. Combine the bread flour, sugar, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, 1 tablespoon (10 g) at a time, until the dough comes together in a solid ball. If the dough is too dry, add additional water, 1 tablespoon (12 g) at a time. Scrape the dough onto a lightly floured surface and gently knead into a smooth, firm ball.

2. Grease a large bowl with the remaining 2 teaspoons olive oil, add the dough, cover the bowl with plastic wrap and put it in a warm area to let it double in size, about 1 hour. Turn the dough out onto a lightly floured surface and divide it into 2 equal pieces. Cover each with a clean kitchen towel or plastic wrap and let them rest for 10 minutes.

Note: Using bread flour will give you a much crisper crust. If you can't find bread flour, you can substitute it with all-purpose flour which will give you a chewier crust.

1 (6 ounce) can tomato paste
6 fluid ounces warm water (110 degrees F/45 degrees C)
3 tablespoons grated Parmesan cheese
1 teaspoon minced garlic (exp 2: 11g)
2 tablespoons honey (exp. 1: cut to 1 tbsp) (exp 2: 1 tsp)
1 teaspoon anchovy paste (optional) (exp. 1: 1/4 fish sauce)
3/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon dried marjoram
1/4 teaspoon dried basil
1/4 teaspoon ground black pepper
1/8 teaspoon cayenne pepper
1/8 teaspoon dried red pepper flakes
salt to taste (exp. 1: 1 gram)

1. In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.

2. Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.
